Ethyl Vanillin has characteristics: fine, white to slightly yellow crystals and usually needle-like. Ethyl Vanillin is affected by light and has the taste of Vanilla . Ethyl Vanillin is soluble in Alcohol, Chloroform and ether. 1g of Vanillin soluble in 100 ml water at 25℃, in 20ml gly. in 20ml water at 80℃. The melting range of Ethyl Vanillin is 81.0-83.0°C.

Usage:

Ethyl Vanillin is used as a flavorant. Ethyl Vanillin is about three times as potent as vanillin and is used in the production of chocolate.
